Peanut Butter Chocolate Rice Crispy Treats

This is one of those unhealthy, but fun and easy recipes that kids will love. This recipe is a version of your basic rice crispy treat. This version, however, is a little fancier, if a rice crispy treat can be fancy.

This rice crispy treat has peanut butter and chocolate in it. What goes better with marshmallows and rice crispy than peanut butter and chocolate? Rice crispy treats on their own are good, but add peanut butter and chocolate, and they are even better.

Peanut Butter Chocolate Rice Crispy Treats

  • 3 tablespoons butter
  • 1- 10 ounce package of large marshmallows
  • ½ cup peanut butter
  • 6 cups of chocolate rice crispy cereal
  • 1 ½ cups of chocolate chips
  • 1 ½ tablespoons of peanut butter

Lightly grease a 9×13 pan and set aside. In a large pan melt butter over medium heat. Add marshmallows and stir constantly until melted. Remove from heat, add peanut butter, and stir well. Add rice crispy cereal and stir until well combined. Carefully press into 9×13 pan.

Mix together chocolate chips and 1 ½ tablespoons of peanut butter and melt. I do this in the microwave stirring every 30 seconds until melted. Spread over rice crispy treats. Let sit until chocolate is set. Cut and serve.

Gluten-Free Tips & A Quiche Recipe

Do you know someone who is on a gluten-free diet?  Have you ever thought you’d like to have them over for a meal, but didn’t know what to feed them?  These days many people are eating gluten free for various reasons.  Some have celiac disease, some are gluten intolerant, and others use it to help a child with an autism spectrum disorder.  Chances are you know one of those people, and the good news it that they are not really that difficult to feed.

Fresh fruits, vegetables, and plain unprocessed meats are all gluten free.  Milk, eggs, and rice are also gluten free.  Plain herbs and spices with a single ingredient are gluten free.  That means you can make a simple but delicious dinner by roasting a whole chicken or beef and serving it with potatoes or rice and vegetables.  Fruit can be served for dessert.  If you want something a little different, though, quiche is a dish that can be served at any meal.  This recipe is crustless, and instead of flour it uses corn starch—something you probably have in your cabinet.

When preparing the food be aware that some people cannot tolerate even a little bit of gluten such as would be found in a crumb of wheat bread.  Be sure your work surfaces, utensils, and baking dishes are clean.  You should use a new jar of mayonnaise when making the recipe below.  If someone spread mayo on their sandwich bread then dipped back into the jar, it could contain crumbs.

Gluten-Free Crustless Quiche

  • 1 lb. ground beef
  • 1 medium onion
  • 1 c. mayonnaise (Kraft & Hellmann’s are gluten free)
  • 1 c. milk
  • 4 eggs
  • 2 Tb. cornstarch
  • salt & pepper
  • 3 c. shredded cheddar cheese

Brown the meat and cook the onion in a skillet. Drain any fat. Using a whisk, combine the mayonnaise, milk, eggs, cornstarch, and salt and pepper (to taste) in a large bowl. Stir in the cheese, beef and onions. Pour into two greased 10 inch pie plates. Bake at 350 degrees for 35 minutes.

Homemade Cheese Crackers

A few years ago when we made the decision to avoid processed and packaged food as much as possible, I worried about snacks. Up until that point, every snack I knew came from a bag, box or wrapper. Would we just learn to forgo those snacky-type foods altogether?

But then I started experimenting and quickly realized the amount of snacks that can be made from scratch is virtually endless. Sweet, salty and savory snacks can all be made at home with out too much effort. Sure, there are times when I give in and we all dig into a bag of chips or box of cookies, but overall, I’m pleased with our from-scratch snacks.

These crackers are a favorite with the kids. My husband and I like them best right out of the oven while still warm, but the kids will eat them anyway. I usually use sharp cheddar because we all prefer the stronger flavor, but you could easily replace it with your favorite cheese.

Homemade Cheese Crackers

  • 2 c. Sharp cheddar cheese, shredded
  • 6 T. butter or margarine, cut into small pieces
  • 1/2 c. flour
  • 1/4 t. cumin
  • 1/8 – 1/4 t. cayenne pepper
  • 3-5 T. cold water
  • Salt, for garnish, optional

1. In a large bowl, combine cheese and butter. Using your hands or a food processor, cut the butter into the cheese until fully incorporated. Work in flour, seasonings and as much water as needed to hold the dough together.

2. Roll the dough into a log about a foot long. Shape into desired shape (circle, oval, square, etc).With a sharp knife, cut off slices of a medium thinness and place on a baking sheet. Repeat until done and sprinkle with some salt, if desired. Bake at 350 degrees for 12-15 minutes, until golden brown.
