Italian Sausage & Peppers

Italian sausage and peppers is one of my husband’s favorite meals. I probably don’t make it as often as I should. But when I found a great deal on bell peppers at Sam’s Club, I knew I had to use them to make this dish.

Once fully cooked, you can freeze the sausage and peppers in a plastic freezer bag. You can eat them just as they are, served in sub rolls, or tossed with spaghetti, which is what I usually prefer to serve.

Italian Sausage & Peppers

  • 3 T. olive oil
  • 1 pkg. Italian sausage
  • 1 onion, sliced
  • 3 bell peppers, sliced (You can use any color that you want, but I recommend using 3 different colors.)
  • 4 cloves garlic, diced
  • 2 t. Italian seasoning
  • Salt and pepper, to taste

1. Heat olive oil in a large skillet, prefferably one with high sides. Add sausages and brown on all sides, about 3-5 minutes per side.

2. Add onion, peppers, garlic and seasonings. Stir to incorporate and cook for 5 minutes. Reduce heat to low, cover skillet and continue cooking until sausages are fully cooked.

  1. I make basically this same thing (we like it on sub rolls for leftovers, with pasta the first night) but it never occurred to me to fully cook then freeze. I’m adding this to my new baby/c-section recovery freezer meal list! Thanks for the tip!

  2. Definitely keeping this recipe. I just received some italian sausage free from a friend, but didn’t know what to do with them – thanks!
