Chocolate & Peanut Butter No-Bake Bars

We used to live less than 5 minutes away from this amazing gourmet food market. We loved to take the kids there on a Saturday or Sunday and just walk around for an hour or two – sampling the samples, watching the train that goes around the ceiling or daydreaming about the fancy foods. We’d usually end our trip at the bakery counter where we’d pick up a few desserts to share.

One of our favorites was their chocolate and peanut butter bars. After the first time I tried one, I knew I could recreate them. It took a little bit of trial and error, but I eventually got my bars to the point where we liked them even better than the ones from the store.

At their core, these bars are pretty basic but full of goodness. What’s not to like about a no-bake chocolate cookie layer topped with a creamy layer that’s topped with a fluffy, sweet peanut butter layer. So many classic feel-good flavors! These Chocolate & Peanut Butter No-Bake Bars are a great way to add some cheer to a cold, snowy day, especially when paired with a big mug of hot chocolate.

Chocolate & Peanut Butter No-Bake Bars

For the first layer:

  • 1/2 c. butter
  • 2 c. sugar
  • 1/2 c. milk
  • 1/4 c. cocoa powder
  • 1 t. vanilla
  • 3 c. oats

In a medium saucepan, combine butter, sugar, milk and cocoa powder. Bring to a rolling boil over medium heat and cook for 2 minutes, stirring continuously. Remove from heat; stir in vanilla and oats. Grease a 13×9 casserole dish and pour the mixture in. Cool completely, at least 30 minutes.

For the second layer:

  • 4 oz. cream cheese
  • 1 1/2 c. powdered sugar
  • 1/4 c. milk
  • 1/2 t. vanilla

Beat the cream cheese and powdered sugar until combined. Add the milk and vanilla and continue beating until fluffy, about 3-5 minutes. Spread over the no-bake layer in the casserole dish.

For the third layer:

  • 1 c. peanut butter
  • 1 T. butter
  • 3/4 c. powdered sugar
  • 1 – 2 T. milk

Beat the peanut butter and butter together until creamy. Add the powdered sugar and milk and continue beating until fluffy. Spread on top of the cream cheese layer in the casserole dish. Refrigerate until set and store in the refrigerator.

  2. I tried to make these…I think I messed up some where in the recipe. Right around layer #2. 🙁 Of course, I’ve messed up Rice Krispy Treats too sooo…..

  3. I tried to make these and they look nothing like the picture 🙁 . The 2nd layer turned out to be really runny and never set and so when i put the 3rd layer on it all kind of mixed together in a gooey mess. Any suggestions of what i might have done wrong?
