Tempura Batter for Veggies

Ingredients

  • 1/2 cup flour
  • 1/2 cup cornstarch
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp sugar
  • 1 tsp salt
  • 1 egg
  • 1/2 – 2/3 cup water

Instructions

  • Whisk all ingredients together in a large bowl, adding water a little at a time to desired consistency. (It should be like pancake batter.) Add any sliced veggies to the bowl and stir to coat. Keep refrigerated until ready to cook.
  • Fry in hot oil, about 45 seconds per side.
