Chicken Brie Spaghetti

Equipment

Ingredients

  • 1 tablespoon olive oil
  • 1 lb boneless skinless chicken thighs diced
  • 8 ounces brie room temperature
  • 1/3 cup julienned sun-dried tomatoes
  • 3 cloves garlic minced
  • 1/4 cup chicken broth
  • 1/2 cup heavy cream
  • 12 ounces spaghetti cooked al dente
  • 1/4 cup chopped basil
  • Salt and pepper to taste

Instructions

  • Heat olive oil in a skillet over medium-high heat. Add chicken and cook until browned and cooked through, 5-7 minutes. Remove chicken to a plate.
  • Reduce heat to medium and add brie and sun-dried tomatoes to the skillet. Add garlic and cook for 1 minute until fragrant.
  • Stir in chicken broth and heavy cream. Simmer for 5 minutes until thickened slightly.
  • Add cooked spaghetti, chicken, and basil to sauce. Gently toss to coat noodles completely.
  • Season with salt and pepper to taste. Serve warm with extra basil for garnish. Enjoy!
