- 1 tablespoon olive oil
- 1 lb boneless skinless chicken thighs diced
- 8 ounces brie room temperature
- 1/3 cup julienned sun-dried tomatoes
- 3 cloves garlic minced
- 1/4 cup chicken broth
- 1/2 cup heavy cream
- 12 ounces spaghetti cooked al dente
- 1/4 cup chopped basil
- Salt and pepper to taste
Heat olive oil in a skillet over medium-high heat. Add chicken and cook until browned and cooked through, 5-7 minutes. Remove chicken to a plate.
Reduce heat to medium and add brie and sun-dried tomatoes to the skillet. Add garlic and cook for 1 minute until fragrant.
Stir in chicken broth and heavy cream. Simmer for 5 minutes until thickened slightly.
Add cooked spaghetti, chicken, and basil to sauce. Gently toss to coat noodles completely.
Season with salt and pepper to taste. Serve warm with extra basil for garnish. Enjoy!
