1/2lbchicken, cubed (boneless, skinless breasts or thighs)
1onion, diced
1green pepper, diced
3stalks celery, diced
2 1/4cuprice (white or brown)
1can diced tomatoes
1can tomato sauce
1cupbeef broth
1 - 2tspcayenne pepper, depending on how spicy you want it
2tspgarlic powder
1tspsalt
1/2tsppepper
1/2tsporegano
Instructions
Heat oil in a large skillet. Cook chicken and Polish sausage until browned. Add onion, green pepper and celery. Stir and cook until onion is translucent, about 5 minutes. Stir in rice and cook for 2 more minutes.
Add tomatoes, tomato sauce, beef broth and seasonings. Bring to a boil, cover skillet and reduce heat to low. Simmer until rice is fully cooked, about 20-25 minutes for white rice and about 60 minutes for brown rice.
