Barbecue Beef & Rice Tacos

Ingredients

  • 1 lb ground beef
  • 1/2 onion, diced
  • salt, to taste
  • 1/8 tsp crushed red pepper flakes
  • 2 cup frozen corn
  • 1 1/2 cup white or brown rice, cooked
  • 1 1/2 cup barbecue sauce (if you prefer homemade sauce, this is my favorite recipe)
  • 1/2 cup water
  • Hard or soft taco shells
  • Shredded cheese for garnish, optional

Instructions

  • Place ground beef and onions in a large skillet. Season to taste with salt and stir in red pepper flakes. Brown ground beef. Drain once fully cooked.
  • Stir in corn and rice. Add barbecue sauce and water; stir until combined. Simmer for 5-10 minutes.
  • Scoop into taco shells and garnish with cheese, if desired.
