Whisk eggs in a small bowl. Stir in sour cream and olive oil.
In a large bowl, stir together the remaining ingredients. Pour in the wet ingredients and stir just until well combined.
Pour into a greased loaf pan and bake at 375 degrees for 45 – 60 minutes, until golden brown and a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes, then finish cooling on a wire rack.
