Roasted Asparagus with Red Onions and Feta

Ingredients

  • 1 lb  asparagus, trimmed and cut into 1 1/2″ pieces
  • 1 red onion, diced
  • 1/4 cup olive oil
  • 1 tbsp freshly squeezed lemon juice
  • 1 1/2 tsp freshly squeezed lemon juice
  • 1 tsp black pepper
  • 1/4 – 1/3 cup crumbled Feta cheese

Instructions

  • Toss asparagus and red onion with olive oil, lemon juice, salt and pepper. Spread in a baking dish and cook at 450 degrees for about 15 minutes, until tender. Stir halfway through cooking.
  • Immediately transfer to a serving dish and stir in Feta. Serve.
