Balsamic Spinach & Water Chestnuts

Ingredients

  • 1 tbsp olive oil
  • 1/2 Vidalia onion, diced
  • 1 16 oz bag frozen spinach (or about 1 1/2-2 pounds fresh spinach)
  • Salt and pepper, to taste
  • 1 can sliced water chestnuts
  • 1/3 cup balsamic vinegar
  • 2 tsp sugar
  • 2 tsp dijon mustard
  • 1/2 tsp each salt, pepper, garlic powder

Instructions

  • Heat olive oil in a large skillet. Add onion and cook until tender, about 5 minutes. Add spinach and water chestnuts; season to taste with salt and pepper, and cook an additional 5 minutes.
  • While the spinach cooks, whisk together the remaining ingredients in a small bowl. Pour into the skillet and cook for 1 minute. Enjoy!
