Ingredients

  • 1 1/2 cups all-purpose flour for a tender crumb

  • 1/2 cup granulated sugar for sweetness
  • 1/2 cup light brown sugar packed (for depth of flavor)
  • 1 large egg as a binder
  • 1 teaspoon vanilla extract for flavor
  • 1 1/2 cups Apple Jacks cereal (or cereal of your choice), slightly crushed
  • 1/2 cup apple chips crushed (for a burst of apple flavor)
  • Optional: 1/3 cup white chocolate chips for a creamy contrast

Instructions

  • Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Whisk together the flour, baking soda, and salt in a bowl.
  • In another bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • Gradually mix in the dry ingredients until just combined.
  • Fold in the slightly crushed Apple Jacks cereal, crushed apple chips, and white chocolate chips (if using).
  • Scoop dough using a cookie scoop or spoon onto prepared baking sheets, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are lightly golden. They will be soft but will firm up as they cool.
  • Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
