Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
Whisk together the flour, baking soda, and salt in a bowl.
In another bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the egg and vanilla extract until well combined.
Gradually mix in the dry ingredients until just combined.
Fold in the slightly crushed Apple Jacks cereal, crushed apple chips, and white chocolate chips (if using).
Scoop dough using a cookie scoop or spoon onto prepared baking sheets, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until the edges are lightly golden. They will be soft but will firm up as they cool.
Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
