Around here, summer calls for desserts that are cool, sweet, easy, and don’t require heating up the kitchen. This dessert totally checks all of those boxes.
Simple Chocolate Pots de Creme – that title sings to me. I am all for simple and chocolate. Combining the two is even better. Actually, that’s pretty easy considering grabbing a chocolate bar or even a handful of chocolate chips is downright simple. But when you add the Pots de Creme to the end of that, this dessert takes on a whole new meaning.
Pots de Creme is simply a rich custard served in a small glass. The consistency of my version is somewhere between a mousse and a custard. But it doesn’t require any fancy ingredients or skills. And the final product is a little bit of chocolaty heaven on a spoon.
Simple Chocolate Pots de Creme
- 1 egg
- 2 T. sugar
- 1/8 t. salt
- 3/4 c. whole milk*
- 1 c. chocolate chips
- 1 t. vanilla
1. In a small saucepan, combine the egg, sugar and salt. Add the milk and whisk to incorporate. Heat over medium heat until slightly thickened. The mixture should be thick enough to cover the back of a spoon.
2. Remove from heat. Add the chocolate chips and vanilla. Stir until the chocolate is completely melted. Pour into a serving dish or individual serving dishes and refrigerate at least 4 hours before serving. The mixture will seem pretty runny at this point but don’t worry, it really firms up as it rests in the refrigerator.
*Note – if you try this with another type of milk, such as 2%, I’d love to hear how it turns out!
