It’s the night before the night before Christmas. You probably have all of your baking and goodie-making done by now. But maybe, just maybe, your family is a little like mine and many little hands (okay, and a a few big ones too) have snuck into your stash a time or twelve. If so, you might feel that you need to add some more goodies to your line-up in order to share with friends and family.
In just about 15 minutes, you can whip up these wonderful Mounds Bites. If you are a fan of Mounds candy bars, you’ll find a lot to like about this recipe. The coconut mixture tastes just like the filling in those famous bars.
Mounds Bites
Ingredients
- 1/2 cup butter
- 2 cup powdered sugar
- 3 cup shredded coconut
- 1/3 cup chocolate chips
Instructions
- Melt butter in a medium saucepan. Remove from heat and immediately stir in the powdered sugar and coconut. Stir until thoroughly combined.
- Roll the coconut mixture into balls a tablespoon at a time. Place on aluminum foil or waxed paper. Make a thumbprint indentation in the center of each ball.
- Melt the chocolate chips in a microwave, stirring every 25-30 seconds, until melted and smooth. Spoon a bit of the melted chocolate into the indentations of each coconut mound. Let cool completely.
Notes
I used semi-sweet chocolate chips, but you can definitely use dark chocolate for a more authentic taste. You could also cover the coconut mounds completely with chocolate if you have the patience. It’s not hard, it just will take a little longer than the above method.
