Meijer Bargain Meals – Week of 4/5

This is definitely the week to stock up on eggs. And if you really wanted to, I bet you could find some great deals on candy. (Well, I know you can, I’m just trying to talk myself out of purchasing some.)

This week’s meal idea is all about taking advantage of the great egg prices. Have a fun breakfast for dinner night, or make a nice big breakfast for everyone one morning.

You can make crepes with the $.88 dozen eggs. Or make a puffed pancake.

Puffed Pancake

  • 6 T. butter
  • 6 eggs ($0.88/dozen)
  • 1 1/2 c. milk
  • 1 1/2 c. flour
  • 1 t. vanilla
  • 1/2 t. salt

1. Put butter in a 13×9 casserole dish and place in a preheated 450 degree oven.  Keep in oven until butter is completely melted, about 5 minutes

2. While butter melts, whisk together remaining ingredients until smooth.

3. Puur egg mixture into buttery hot casserole dish. Bake for 20-25 minutes, until pancake is puffed and browned around the edges.

The crepes or puffed pancake can be sprinkled with powdered sugar brown sugar (on sale for $1.98/4 lb. bag) and topped with sliced strawberries (2 lb/$3).
