Bacon & Cheese Grits

Overall, we are not a very picky family when it comes to food. We like a large variety of tastes and cuisines. However, some of have a tendency to be picky when it comes to the texture of our foods. And honestly, I am probably top among those offenders. I skip over most hot cereals because I just can’t stand the texture.

So grits have been something that I’ve avoided making because I just figured it wouldn’t pass some of our high texture standards. But I knew that my husband loves grits. And since I’m always looking for items to add to our breakfast routine, I thought it would be worth a shot. At the very least, I figured he’d have a breakfast he really enjoyed while the kids and I settled for toast.

I let my husband stir up our first pot of grits and make it exactly the way he liked it. Our girls happily finished off their bowls while our son and I picked at it enough to call it breakfast, or at least something like it. But that first experience with grits wasn’t bad enough to turn me off of grits for good. I decided I’d play around with them and see if I could come up with something that we’d all enjoy.

Since I’ve never known a dish that wasn’t made better by bacon and cheese, I thought that would be a great starting point. I also considered the texture and the issues I had with the grits while making a big pot to serve as a side dish with dinner. A little tweaking and experimenting while I made the grits resulted in a final product that wasn’t something incredible. The grits turned out rich and creamy and just full of bacon and cheese flavor. We all loved these Bacon & Cheese Grits with our dinner. Our oldest declared it her new favorite food and everyone wanted the leftovers for breakfast the next morning.

Ingredients

  • 3 cup milk
  • 2 cup water
  • 1 cup quick-cooking grits
  • 3 tbsp butter
  • 1/2 lb diced, fully cooked bacon
  • 1 cup shredded Colby-Monterey Jack blend
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  • Combine milk and water in a pot over medium heat. Bring to a slow boil. Stir in grits, reduce heat and simmer for about 5 minutes, stirring frequently, until desired consistency.
  • Remove from heat and stir in remaining ingredients until combined.
