Meijer Bargain Meals – Week of 4/5

bargainmealoftheweekbuttonThis is definitely the week to stock up on eggs. And if you really wanted to, I bet you could find some great deals on candy. (Well, I know you can, I’m just trying to talk myself out of purchasing some.)

This week’s meal idea is all about taking advantage of the great egg prices. Have a fun breakfast for dinner night, or make a nice big breakfast for everyone one morning.

You can make crepes with the $.88 dozen eggs. Or make a puffed pancake.

Puffed Pancake

  • 6 T. butter
  • 6 eggs ($0.88/dozen)
  • 1 1/2 c. milk
  • 1 1/2 c. flour
  • 1 t. vanilla
  • 1/2 t. salt

1. Put butter in a 13×9 casserole dish and place in a preheated 450 degree oven.  Keep in oven until butter is completely melted, about 5 minutes

2. While butter melts, whisk together remaining ingredients until smooth.

3. Puur egg mixture into buttery hot casserole dish. Bake for 20-25 minutes, until pancake is puffed and browned around the edges.

The crepes or puffed pancake can be sprinkled with powdered sugar brown sugar (on sale for $1.98/4 lb. bag) and topped with sliced strawberries (2 lb/$3).

Meijer Bargain Meals – Week of 3/7

This week would be a great time to prepare a super easy meal, at least for me. And fortunately, all of the ingredients in one of my favorite, emergency stand-by meals, are on sale.

Sausage & Dirty Rice

  • 1 lb. Smoked sausage (Hillshire Farm – on sale 2/$4)
  • Zatarain’s Dirty Rice mix (10/$10, 11th free)
  • Skillet corn (Meijer frozen corn – 10/$10, 11th free)
  • Cole’s Mini Garlic Bread (10/$10, 11th free)

1. Slice the sausage in half lengthwise then into slices. Brown in large sauce, and prepare the rice mix in the pot according to directions on the box. Serve with skillet corn and garlic bread, if desired.

Meijer Bargain Meals – Week of 3/1

March is frozen foods month and Meijer is providing us with lots of great frozen food sales and coupons. This would be a great time to stock up!

Here are a few of the meal ideas I see based on this week’s sales.

Breakfast (or breakfast for dinner)
Peach & Pecan Puffed Pancake

  • 1 c. flour
  • 1/4 c. sugar
  • 1/2 t. salt
  • 1 c. milk (sale price – 2/$4)
  • 4 eggs, beaten
  • 3 T. margarine or butter
  • 2 peaches, sliced (sale price – $.89/lb.)
  • 1/4 c. pecans, chopped (sale price – $5.99/lb. bulk)
  • 1/2 t. cinnamon

1. Combine flour, sugar, salt, milk and eggs in a large bowl and whisk well. (Or blend in a blender.)

2. Place the margarine or butter in a 13×9 casserole dish and place in a 425 degree oven. Leave in about 3-5 minutes, until margarine or butter is completely melted. Remove dish from oven and tilt to coat bottom completely.

3. Immediately pour the batter into the pan, arrange the peach slices, pecans and cinnamon on top of the batter. Place in the oven and bake 15-20 minutes, until puffy and golden brown.

*Serve with bacon (Plumrose bacon – 2/$4)

Dinner
Sausage, red beans & rice

  • 2 T. olive oil
  • 3 ribs celery, chopped
  • 1 medium green bell pepper, chopped
  • 2 clove garlic, minced
  • 1 large onion, chopped
  • 1 lb. smoked sausage, sliced (Eckrich – 2/$4)
  • 1/2 c. tomato sauce (Hunts – 5/$4) + 2 T. water
  • 2 tablespoons dried parsley flakes
  • 1 bay leaf
  • dash of ground cayenne pepper, or to taste
  • 2 cans kidney beans, rinsed and drained (Meijer-brand canned beans – 5/$3)
  • White or brown rice

1. In a large skillet, heat the olive oil. Add celery, green pepper, garlic, onion and smoked sausage. Cook over medium heat, about 10 minutes, until sausage is somewhat browned.

2. Add the tomato sauce, water and seasonings. Bring to a slow boil, add the beans and simmer about 15-20 minutes. Remove bay leaf and serve over rice.
