It’s just about time to start on the Christmas baking around our house. I like to get started early and then freeze either cookies or dough. That way, I can do a few batches each week leading up to Christmas. Then, by the time Christmas rolls around, I’m all set and ready to go.
I’ve spent a few minutes over the past couple days writing out my cookie and candy list for this year. I always start out with huge aspirations but generally settle for being happy if I get to 75% of what I’d planned.
These cookies are my all-time favorite cookies. I only make them at Christmas time because I like keeping them as a special, once a year treat. Their flavor reminds me of pralines, without as much over-the-top sweetness.
- 1/2 c. butter or margarine
- 3/4 c. sugar
- 1 egg, beaten
- 1 t. maple extract
- 1 1/2 c. flour
- 1 tsp. baking powder
- 1/4 t. salt
- 1/2 c. chopped pecans
1. Cream together butter or margarine and sugar until fluffy. Add egg and maple extract; mix for 2-3 minutes.
2. Combine flour, baking powder and salt in a small bowl; whisk together. Slowly add to the butter mixture until completely mixed. Stir in the pecans.
3. Bake at 350 degrees for 8-10 minutes.
*Both the dough and the baked cookies can be frozen.
