Update ~ Bulk Cooking Before Baby

I’m starting to feel the pressure to get things done around here. I spent most of Saturday baking and a good portion of today was dedicated to washing baby clothes. Tuesday puts us at 35 weeks, which for me means it could be any time. Our oldest was born at 41+ weeks, but the other 3 have been much earlier – #2 was 35 weeks, 3 days; #3 was 34 weeks, 6 days and #4 was 36 weeks, 2 days. So you see where I might be getting a little anxious.

However, I’m feeling pretty on top of my bulk cooking list I wrote up a few weeks ago. There have been several deviations from that list and a few snags along the way. (Snag #1 would be when I spent a whole day baking only to have us eat almost everything I made that day within a week. Oops!) But overall I am enjoying the sense of accomplishment I get as I watch my brand new 7 cubic foot chest freezer fill up. Oh, the joy!

While I usually do some freezer cooking every single month, spaced out over the first few days after our monthly grocery trip, this bulk cooking project feels so different for me. I am really breaking things up and only working as I feel inspired. If I just don’t feel like doing anything extra one day, I skip it without guilt. I can’t believe how freeing this has been and how much I’ve gotten done in spite of that attitude.

Most days I just do one or two extra things for the freezer. Since I first wrote that li st, I’ve only spent 3 days where a good chunk of my day was devoted to working on things for the freezer. This Saturday was one of those days.

I decided I want to get us really stocked up on muffins. We all love muffins and they are great to have on hand for breakfast, snacks or even to go with a light lunch. It was a chilly, rainy day and I love spending the day in the kitchen on days like that. So while my husband and kids cleaned the house and washed and folded 5 loads of laundry (lucky, aren’t I?), I baked up a storm. And best of all, I got to end the day by going on our last before-the-baby-is-born date night. That’s what I’d call an all around perfect day.

Until I pulled everything out today, I didn’t really have a firm grasp of just what all I had. I definitely had a vague idea that wasn’t too far off, but I decided I needed to keep a running inventory list. Here’s how that list looks so far:

I still have a lot things I’d love to add to the freezer. I think I’ll keep tackling it a little bit every day (except for those mega days) and just be happy with however much I get done. I’m also trying to do all of this while still sticking to our monthly budget. I have $175 left for the month, which should stretch pretty far. We’ll see though. I may just get tired and spend that money on some convenience items! (Kidding…kind of.)
My husband also asked if I had a freezer map so that he, and whoever watches the kids while I’m having the baby, can find everything. I don’t, but I think it’s a great idea! So that is also on my to-do list for this week.

Settling In and Filling The Freezer: A 3 Moms Update

Since spending the month in my kitchen for the 3 Moms, 3 Kitchens, 31 Days series, a lot has changed around our house!

In fact, our entire house has changed. After waiting and searching for months, after watching a deal fall through and turning in a few offers just a little too late, we finally found OUR house. We moved in on June 18th. Our summer has been filled with unpacking, settling in and making this place truly home. We’ve gotten a ton done, but there are still quite a few things on our to-do list. Fortunately, most of those things can wait a while since we’re also getting ready for October 19th. That is the day baby #5 is due.

Here are a few shots of my new kitchen. I love it!  It’s wonderfully functional and neither too small nor too big.

One of the things on our to-do list is to paint those two white walls a light green apple color. I think it will add tons of character and coordinate really well with the blue on the other walls.

In the first picture, you can kind of see the back door and mud room. We are working on turning that mud room into a mud room/pantry. There will be hooks on the wall for jackets and backpacks, plus a shelf for shoes. The other side of the will have a built in “closet” for the pantry and a chest freezer.

Our new neighbors have been extremely generous in sharing their garden bounty with us this summer, as well with offers of helping us till a section of our backyard for the garden we are planning to put in next spring. The kids love going across the street and filling up their baskets with lots of fresh veggies. And I’ve put all that fresh produce to good use – a yummy batch of Creamy Tomato Basil Bisque, a huge pot of homemade spaghetti sauce (6 bags in the freezer so far!) and lots of other fun dishes, including my first attempt at cooking swiss chard (recipe later this week).

At the top of my priority list right now is tackling lots of Bulk Cooking Before Baby. My goal is to have at least a few weeks worth of breakfasts, lunches, dinners and baked goods in the freezer before the baby is born. I’m also attempting to do this while still sticking to our monthly budget of $400. So far, the plan is working really well. There have been some great sales that have really helped in this regard.

I spent the day on Saturday making a few things for the freezer. I veered a little from the list above, but I’m pleased with what I got done – 2 dozen grilled cheese pockets (recipe later this week), 3 dozen mini banana muffins, a dozen tortillas, a dozen cream cheese & chocolate chip cinnamon rolls. There is still a ton to get checked off my list, but I plan on making at least one thing each day this week and in the coming weeks to add to the freezer. Hopefully I’ll sneak in a more all-day cooking sessions too.

It’s been a fun and busy summer for our family, and we’re looking forward to more of the same in the coming months.

Bulk Cooking Before Baby

UPDATE – Just over 5 weeks to go until my due date and I’ve made HUGE progress (along with several deviations) on this list! I can’t wait to share all the results on Monday. In the meantime, make sure you check out all the other great freezer cooking plans at Money Saving Mom.

So, we’re at 9 weeks and counting until baby d-day, although if this baby follows the pattern of the last 3, that date could be pushed up by quite a few weeks. That means that I’m really starting to feel the push to get as prepared ahead of time as I can. And my nesting instinct definitely kicked in this week, so that can only help the situation. Along with getting ready for baby, we’re also getting ready for school to start in just under 3 weeks. The kids will be going to a new school this and our 5 year old is starting kindergarten. It will definitely be an adjustment for us all. And as we adjust to both the new school routine and the new baby, I want to make sure I can be as present for the kids as possible. That’s where a little advance preparation will really come in handy. At least that’s what I’m hoping! To that end, I have spent the past few days putting together a bulk cooking list for myself. My goal is to get at least 7 items (one per day) crossed off the list each week, which should leave me in fairly good shape even if I do deliver early and don’t make it all the way through the list. I’ll admit that I’m feeling a bit overwhelmed by this list. Yes, freezer cooking has definitely been a regular part of my life for years, but it always had to be deliberately scaled back due to freezer space. Well, within the next few weeks, we are purchasing our first ever chest freezer. And I plan to have that baby packed full of food before this baby arrives! Here is my list as it stands now. I’m sure there will be adjustments made here and there as I work through, but it’s good to have an overall idea of where I’m headed. Breakfast Items

Okay, here’s the funny thing – this list was smaller when I started copying over from my hand-written list. I kept thinking of other things to add that I know always go over well and that I know we all find comforting. I have to force myself to stop though, at least if I have any hope of getting through this whole list in (less than?) 9 weeks. Anyone else have bulk/freezer cooking plans in the immediate future?
