Update ~ Bulk Cooking Before Baby

I’m starting to feel the pressure to get things done around here. I spent most of Saturday baking and a good portion of today was dedicated to washing baby clothes. Tuesday puts us at 35 weeks, which for me means it could be any time. Our oldest was born at 41+ weeks, but the other 3 have been much earlier – #2 was 35 weeks, 3 days; #3 was 34 weeks, 6 days and #4 was 36 weeks, 2 days. So you see where I might be getting a little anxious.

However, I’m feeling pretty on top of my bulk cooking list I wrote up a few weeks ago. There have been several deviations from that list and a few snags along the way. (Snag #1 would be when I spent a whole day baking only to have us eat almost everything I made that day within a week. Oops!) But overall I am enjoying the sense of accomplishment I get as I watch my brand new 7 cubic foot chest freezer fill up. Oh, the joy!

While I usually do some freezer cooking every single month, spaced out over the first few days after our monthly grocery trip, this bulk cooking project feels so different for me. I am really breaking things up and only working as I feel inspired. If I just don’t feel like doing anything extra one day, I skip it without guilt. I can’t believe how freeing this has been and how much I’ve gotten done in spite of that attitude.

Most days I just do one or two extra things for the freezer. Since I first wrote that li st, I’ve only spent 3 days where a good chunk of my day was devoted to working on things for the freezer. This Saturday was one of those days.

I decided I want to get us really stocked up on muffins. We all love muffins and they are great to have on hand for breakfast, snacks or even to go with a light lunch. It was a chilly, rainy day and I love spending the day in the kitchen on days like that. So while my husband and kids cleaned the house and washed and folded 5 loads of laundry (lucky, aren’t I?), I baked up a storm. And best of all, I got to end the day by going on our last before-the-baby-is-born date night. That’s what I’d call an all around perfect day.

We did snack on some of the muffins throughout the day and we shared quite a few with my in-laws who baby-sat the kids. Here’s the tally from before those things happened:

Until I pulled everything out today, I didn’t really have a firm grasp of just what all I had. I definitely had a vague idea that wasn’t too far off, but I decided I needed to keep a running inventory list. Here’s how that list looks so far:

I still have a lot things I’d love to add to the freezer. I think I’ll keep tackling it a little bit every day (except for those mega days) and just be happy with however much I get done. I’m also trying to do all of this while still sticking to our monthly budget. I have $175 left for the month, which should stretch pretty far. We’ll see though. I may just get tired and spend that money on some convenience items! (Kidding…kind of.)
My husband also asked if I had a freezer map so that he, and whoever watches the kids while I’m having the baby, can find everything. I don’t, but I think it’s a great idea! So that is also on my to-do list for this week.

A Day For Baking

I love baking days! I’ve been doing both baking and cooking days for a few years now and they save me an enormous amount of stress and time. Not to mention it makes taking advantage of those stolen moments that much easier!

And today was possibly one of the most fun baking days I’ve ever had. It was just me and my two little girls in the kitchen, but a lot of my bloggy friends were having their own baking days too. We all shared our progress throughout the day on twitter. (If you want to see all the fun, we used hashtag #bakingday.)

I actually split my baking day into two days, and I still have a few things on my list that I hope to finish up tomorrow. I started on Sunday with a batch of Blueberry Breakfast Crumble and a triple batch of biscuits. I turned a portion of the biscuits into breakfast biscuits and substituted butterscotch chips for the chocolate chips since that was all I had on hand.

The breakfast crumble is gone now and so are half of the biscuits. The other half is in the freezer.

Today the little girls and I worked together while their older sister and brother were at school. We didn’t have a whole day though since we had a gymnastics class and a grocery trip in the middle of the day. I’m still pretty pleased with our progress.

One of my favorite parts of a day spent in the kitchen is wearing the awesome apron The Happy Housewife made for me. I even choose my clothes for the day so that they coordinate with the apron. I love it!

We started the day with a double batch of pizza dough. I used this pizza dough recipe, which already makes a pretty big batch of dough. We froze enough dough for two nights worth of pizzas and used what was left for tonight’s dinner.

Then we made a big batch of chocolate chip cookies. I baked half the dough for an after school snack and froze the rest.

The cookies didn’t turn out very pretty. My oven seemed off all day. (Either that or the chef was off, as my husband so gently pointed out to me.) But they still tasted great. I guess I’ll find out when I bake the batch from the freezer if the fault lies with the oven or me.

We finished off the day with a dozen mini crustless quiches. These went into the freezer for quick school day breakfasts. (More on these tomorrow.)

So, we didn’t make it through the whole list, but I’d still say it was a very productive day. In fact, I think it was exhausting for at least one of us.

Tomorrow I plan to make some homemade crackers, granola bars and tortillas. Then I’m going to try to get a few dinners in the freezer too. We’ll see how it goes.

Junior-Sized Baking Day

Whenever Crystal posts about doing a baking day, I always get a little excited to doing some extra baking, whether I was planning to or not. It worked rather nicely this week since  I really needed to get some done but couldn’t find the motivation.p4154645

So I decided to do a few things and have a mini baking day. I really couldn’t do too much since my freezer is pretty packed right now. On the flip side though, the more I baked, the more we’d have yummy things to snack on. That’s both good (if you’re my husband or kids) and bad (if you’re me who’s still trying to lose 10 pounds but can’t resist a fresh-baked cookie).

Here is what I accomplished today:

  • 1 batch oatmeal cookie dough (1/2 the dough went in the freezer and the other half were used to make these blackberry jam-oatmeal cookie sandwiches.)

I’ll be the first to admit that the quantity is not very impressive. But the quality? Oh yeah! Everything was so good I had to force myself to walk away from the kitchen.
