Apple Jacks Cereal Cookies

Boxed cereal does not make a regular appearance at our house. But we do get a box occasionally. It’s typically used as a snack instead of breakfast.  And lots of times, it’s used to make these awesome cookies.

The dough is friendly to lots of cereals, so feel free to use your family’s favorite. I used Apple Jacks (well, honestly, the Kroger generic brand called “Apple Dapples”) this time, but have successfully used fruit loops and fruity pebbles in the past.

Apple Jacks Cereal Cookies

  • 1 c. butter or margarine
  • 1 1/2 c. sugar
  • 2 eggs
  • 2 3/4 c. flour
  • 1 T. baking powder
  • 1/4 t. salt
  • 3 c. Apple Jacks (or cereal of your choice), coarsely crushed
  • 1/3 c. sugar, for garnish

1. Cream butter or margarine with sugar until creamy. Beat in eggs. Add flour, baking powder and salt. Beat just until combined. Stir in coarsely crushed cereal.

2. Roll a heaping teaspoon of dough into a ball and roll in sugar. Place on a cookie sheet and bake for 8 to 10 minutes at 400 degrees.

This recipe makes between 5 and 6 dozen cookies. I tend to make the whole batch at once since then we’d just eat them all at once. I usually freeze half the dough instead.
