NOW (January 19, 2019) – Sometimes, a little Spring/Summer flavor is a very welcome thing. That is especially true when the actual temperature outside -5 degrees. Good thing these Mini Lemon Scone Bites with Lemon Glaze go so perfectly with a hot cup of coffee or tea!
THEN (April 12, 2010) – While we all love lemon flavors around our house, for our oldest daughter, lemon is a stand-out favorite. She requests lemonade pie for her birthday instead of a frosting-heavy cake or cupcakes. And she frequently asks me to make lemon poppyseed muffins for breakfast.
So when I wanted to make a sweet snack for us over the weekend, I was definitely thinking something lemon-flavored would go over well. And since I had a whole bag of lemons sitting on my counter, I knew I really didn’t have much choice.
I don’t regret my decision for one minute. These mini scones turned out perfectly with just the right amount of tang and sweet. The glaze added a nice contrast to the traditionally drier texture of the scones.
Mini Lemon Scone Bites with Lemon Glaze
Ingredients
For the scones:
- 2 cup flour
- 1/4 cup sugar
- 1 tsp backing soda
- 1/2 cup butter, cut into small pieces
- 2 tsp freshly grated lemon zest
- 1/4 cup milk
For the Lemon Glaze:
- 1 cup powdered sugar
- 2 tsp fresly grated lemon zest
- 1/4 cup freshly squeezed lemon juice (more or less depending on consistency)
Instructions
For the scones:
- Stir the lemon zest into the mixing bowl. Combine the lemon juice and milk and immediately pour into the mixing bowl. Stir until combined and work dough into a ball. Knead 8-10 times. Let dough rest in the refrigerator for at least 15 minutes.
- On a well floured surface, roll out dough until it is about a 1/2″ thick. With a knife, cut the dough into small triangles. Or, using a shot glass or clean medicine cup, cut the dough into small circles. Place on a cookie sheet and bake at 350 degrees for 12-15 minutes, until lightly golden brown on top. Remove to a wire rack and cool completely.
For the Lemon Glaze:
- In a small bowl, combine powdered sugar and lemon zest. Slowly add just enough lemon juice until you reach the desired consistency for a glaze. (I just squeezed my lemon directly into the bowl and added more as needed. I used almost a whole lemon (roughly 1/4 c. lemon juice) to get the right consistency.)Note to self: Next time, line the counters with something – anything – before spooning the glaze over the mini scones!
- Spoon glaze over the cooled mini scones and let dry. Enjoy!
