It’s official…fall is here. Well, maybe not officially, but on a day when it doesn’t get above 70 and a week ahead that promises much of the same, I call it open season on soup. Honestly, I just couldn’t wait any longer.
Potato soup has always been my favorite of all the soups. It’s what I order at restaurants when it’s available. There even used to be times when I’d choose a certain restaurant just because I loved their potato soup. I’ve been making it for a few years, but it took me a long time to get it right. My versions used to always lack either the right zip or the right consistency. I can’t tell you how excited I was when I finally got it right.
So here is my Loaded Baked Potato Soup, developed after years of falling short!
Loaded Baked Potato Soup
- 1 lb. bacon, diced
- 1 onion, diced
- 5 large Russet potatoes, peeled and cubed
- 3 c. chicken stock
- 3 T. butter
- 3 T. flour
- 1 1/2 c. milk
- 3 green onions, sliced
- 3/4 c. shredded cheddar cheese, divided
- 1/2 t. black pepper
- Sour cream for garnish, optional
1. In a large stock pot, cook bacon until crisp. Remove with a slotted spoon to drain and set aside. Drain all but 2 T. of bacon grease from the pot. Cook the onions in the remaining bacon grease for about 5 minutes, until tender.
2. Add potatoes and chicken stock to pot. Bring to a boil, reduce heat to medium and simmer about 20 minutes, until potatoes are tender. With a slotted spoon, remove a few scoops of potatoes. Place in a bowl and mash with a fork. Set aside.
3. In a small sauce pan, melt butter. Stir in flour and cook for 2 minutes. Whisk in milk, bring to a boil and simmer until thickened. Slowly stir in to stock pot. Bring to a boil, reduce heat to low and simmer. Stir mashed potatoes back into pot.
4. Add 1/2 c. shredded cheese, three-fourths of the bacon and half the sliced green onions to pot. Add pepper. Stir to combine. Cook an additional 5 minutes.
5. To serve, ladle soup into individual bowls and top with some shredded cheese, bacon, green onions and optional sour cream.

Why is it called baked potato soup when the potatoes aren’t baked???
Duh, because it tastes like a loaded baked potato when you are finished. Why are they called Girl Scout Cookies when there are no girl scouts in the recipe?

This is one our favorite recipes! I made it last winter and my kids have asked for it several times (even during the humid Chicago summer!!). Even my picky son who HATES any kind of soup loves it!
This was yummy and easy to make! We all enjoyed it! Will be a regular around here!
Great soup. We loved it! I make alot of soups but never did the flour/milk thickening for cream based ones (usually just half & half or milk) but it gave it a great consistency.
I substituted a small jar of real bacon bits and used butter instead of the bacon drippings with the flour.
It was perfect (and will probably be even better the second day).
Awesome soup! So tasty and easy to make.
How many servings does this make?
I halved the recipe and got three filling servings in soup cups. Easy and yummy!
I made this tonight and it was awesome. Added some season all and used heavy cream since I needed to use some up.

Absolutey awesome recipe. I made it one night (tripled your recipe) and everyone loved it. Gave some to the neighbors and they said it was the best soup they’ve ever had. Coming back today to make it a second time but having some garlic cheddar drop biscuits to go with it. Yummy:)
I made this soup for my family last night (04/23/2012) and they went crazy over it!! I had showed the recipe to my good friend and co-worker, after printing it out and she had asked to try some the next day. I brought it to work and she told me it was the best potato soup she had ever had, and that she loves potato soup!! I also have to say that I love your web site!! Thank you for putting it up for us!!

This was amazing! I left out the bacon to save calories, but it was still fabulous! So glad I found this recipe.
Although, I think the potatoes were cooked too long.

I love potato soup, but I like hunks of potato in it. Would it work if I diced the potatoes instead of mashing them ?
There are hunks of potatoes in it. You only remove a couple scoops worth of the potatoes and mash that but leave the rest. I’m guessing it adds to the consistency and thickens it up.

wow… this was so bomb. hahaha I’m 18, and home alone on a cold day and decided to make this! it didn’t look right at first.. and i thought it did it wrong, but once everything was all done, it was perfect!
I just made this for dinner tonight –10/28/12–and my family loved it. Even my little brother [highly picky that he is, he only ate a little but he still liked it] liked this soup. I might use a little less ‘thickening’ stuff next time, since this turned out more like a stew than a soup, but still.
shall make some sort of side dish as well, next time. All in all very good!
I made this today and its amazing! Absolutely perfect, and one I will make again and again. I wonder if you can freeze it as there are only two of us and way too much soup, any ideas anyone?
Cut all the ingredients in half and make half the size pot so you don’t have nearly as many left overs. =)
I’ve frozen this soup before and it turns out perfectly. I made sure to divide into servings before freezing it.
This is a delicious recipe for ham and potato soup that a friend gave to me. It is very easy and the great thing about it is that you can add additional ingredients, more ham, potatoes, etc and it still turns out great.
It’s a blustery day here in Oregon, today. A perfect day for soup! This recipie rocks and turned out PERFECT! I had most of the ingredients on hand, already, and I have enough for a crowd. Now….to just find a crowd.

Made this for dinner tonight. My son, who is a very picky eater ate 2 bowls. Tasted so good I was looking forward to having more later until I noticed it’s completely gone. Bummer!

Just made the potato soup today since its raining and a great day for cooking such things while reading a good book.
Have to say its the best potato soup ive ever eaten.
Next time jam going to use celery ,carrots a big can of minced clam and juice and I think it will make an awesome simple chowder.Have to say its one of the most simplistic soups ive ever made.
