It’s official…fall is here. Well, maybe not officially, but on a day when it doesn’t get above 70 and a week ahead that promises much of the same, I call it open season on soup. Honestly, I just couldn’t wait any longer.
Potato soup has always been my favorite of all the soups. It’s what I order at restaurants when it’s available. There even used to be times when I’d choose a certain restaurant just because I loved their potato soup. I’ve been making it for a few years, but it took me a long time to get it right. My versions used to always lack either the right zip or the right consistency. I can’t tell you how excited I was when I finally got it right.
So here is my Loaded Baked Potato Soup, developed after years of falling short!
Loaded Baked Potato Soup
- 1 lb. bacon, diced
- 1 onion, diced
- 5 large Russet potatoes, peeled and cubed
- 3 c. chicken stock
- 3 T. butter
- 3 T. flour
- 1 1/2 c. milk
- 3 green onions, sliced
- 3/4 c. shredded cheddar cheese, divided
- 1/2 t. black pepper
- Sour cream for garnish, optional
1. In a large stock pot, cook bacon until crisp. Remove with a slotted spoon to drain and set aside. Drain all but 2 T. of bacon grease from the pot. Cook the onions in the remaining bacon grease for about 5 minutes, until tender.
2. Add potatoes and chicken stock to pot. Bring to a boil, reduce heat to medium and simmer about 20 minutes, until potatoes are tender. With a slotted spoon, remove a few scoops of potatoes. Place in a bowl and mash with a fork. Set aside.
3. In a small sauce pan, melt butter. Stir in flour and cook for 2 minutes. Whisk in milk, bring to a boil and simmer until thickened. Slowly stir in to stock pot. Bring to a boil, reduce heat to low and simmer. Stir mashed potatoes back into pot.
4. Add 1/2 c. shredded cheese, three-fourths of the bacon and half the sliced green onions to pot. Add pepper. Stir to combine. Cook an additional 5 minutes.
5. To serve, ladle soup into individual bowls and top with some shredded cheese, bacon, green onions and optional sour cream.

Can this be frozen?? CAnnot wait to try it and I also love to make soups, but can never get ones with potatoe to freeze without being muchy when you thaw!!
I made some last weekend and froze a couple of bowls. Just thaw and microwave, tasted just as good as the day I made it.

Hello! I recently found your blog and oh my. You have such tasty-looking recipes.
I made this potato soup last week. Yum! The method for cooking the bacon was perfect. I had never thought to do it that way. Why to recipes always call for you to cook the whole slice and then crumble? Much easier this way in my opinion.
Anyway, I think my potatoes were too big, or I just like more liquid b/c it was a little too thick for me. And, believe me, I love a thick soup. With just that slight adjustment, I have finally found a potato soup recipe that I love. Thanks for sharing!

Wonderful soup. It was very hearty and filling. The flavor was great. We will make it again.
I tried this tonight after years of nothing but watery mashed potatoes instead of soup, and this came out great! I think my potatoes were larger than what you use, but I can salvage my soup with more chicken broth. I also added rosemary because we’re not fans of green onions. Delicious!

Just made this, turned out great, especially with sour cream! Didn’t use an onion though, probably would’ve gave it more flavor but my family has a thing about onions.
Just make sure the potatoes get cooked fully!

*Quick Tip*
If you are on a time restraint, you can do a quick cook in microwave, with the potatoes to save a few mins of cooktime.

I made this soup with one adjustment to the recipe. I used half and half instead of just plain milk and it was awesome. Next time I might throw one garlic clove and maybe about 3/4 of an onion, but this soup was amazing…. The entire pot was gone within 30 mins or so.

This recipe is terrific! Very easy to understand and execute. I only used half the bacon and found it to be more than enough. Took me about an hour, including cleanup. I would say it’s about six servings. Thank you for sharing!
This is the BEST potato soup I have ever had. I made a batch last weekend and it was so awesome that I made a triple batch today so I could load up my freezer. I love you and your recipes!!!!!
OMGosh!!!!! I made this soup for dinner tonight & it was CRAZY GOOD!!!!!!! The only changes I made were to omit the sauteed onions and pepper, as well as leaving the green onions to garnish, instead of putting them in the soup. Oh, and I increased the 2c. of chicken stock to 3c., as I used about 8-9 MEDIUM potatoes.
I seriously can’t get over how DELISH this was!!!!! Hubby can’t either;) Thank you, a thousand times, thank you, for laboring until you perfected this recipe!!!!! Yum, yum, yum!!!!
