I feel so fortunate that our family doesn’t have any specific dietary restrictions or allergies, at least as of yet. However, I have an immense amount of respect for those families that deal with them as a part of life. I know you just do what you have to do, but I’m often amazed at the great ways they are able to work around their diets and still create wonderful, family-friendly meals.
Linda, The Gluten-Free Homemaker, is one of those who inspires me with her positive attitude, creativity and kitchen skills on a daily basis. She has to follow a very strict gluten-free diet, but you’d never know her meals are born out of necessity with just a quick glance through her blog. Everything looks so delicious! Beef Barbecue Sandwich – My family loves this sandwich, but also enjoys other fillings. It could be made with a regular foccacia bread recipe.
Gluten-Free Focaccia Bread/Hamburger Buns – Even though the rest of my family does not have to eat gluten-free, they love eating this bread. I like to bake and freeze extra hamburger buns for summer cookouts.
Gold Potato Casserole – This is a favorite that my mom makes. It’s great with almost any meal.
Gluten-Free Pancakes – Who doesn’t love pancakes? These are a breakfast favorite at our house.
Pecan Praline Cake – The secret to this delicious cake is the “topping” which is put into the bottom of the pan. If you don’t bake gluten-free, just use your favorite yellow cake mix or recipe.
