Blueberry Fritters

I know…I know…this blog has been a bit of blueberry overkill lately. But these fritters were too delicious to not share the recipe. Also, they’d be great for a quick, last minute breakfast on the Fourth of July. With the blueberries and powdered sugar, you’ve got the blue and white covered.

Blueberry Fritters

  • 1 c. flour
  • 1 1/2 t. baking powder
  • 1/2 t. salt
  • 2 T. sugar
  • 1/3 c. milk
  • 2 eggs
  • 1/2 t. vanilla
  • 1 – 2 cups blueberries, fresh or frozen (If using frozen, do not thaw first.)
  • Oil for frying

1. Combine the flour, baking pwder, salt and sugar in a bowl. In a separate bowl or cup, whisk together the milk, eggs and vanilla. Add to the flour mixture and stir until a smooth dough is formed. Fold in blueberries. (It’s okay if some break or mash while stirring.)

2. Heat about an inch of oil in a skillet over medium heat. Drop dough by tablespoons into oil and cook for about 3 minutes per side, until lightly browned. (Watch them carefully so that the insides cook before the outside burns.) Drain on paper towels and roll in powdered sugar when cooled.

The Funny Thing About Vacations…

Is that you don’t cook very much. Which in turn means that you don’t have many recipes or food pictures to post on your cooking blog. And your brain is in vacation mode so it’s not really focused on anything kitchen related. Thus, you have no pearls of wisdom or wit to share with your blog readers.
