Banana Muffins

- 1 1/2 cups flour
- 1 1/2 t. baking powder
- 1/2 t. cinnamon
- 1/4 t. baking soda
- 1/4 t. salt
- 1 egg
- 1 t. vanilla
- 2 mashed bananas
- 3/4 cup sugar
- 1/4 cup applesauce
- 1/4 c. chopped walnuts or chocolate chips (optional)
1. Combine flour, baking powder, baking soda, cinnamon, and salt. Stir in egg, vanilla, mashed bananas, sugar, and applesauce until combined. If desired, fold in optional ingredients.
2. Pour into greased muffin tin and bake at 350 for 15-20 minutes. Makes 12 regular sized muffins.

I just made these and they are going fast! Next time, though, I’m going to add more choc. chips.

Making these today since I’m at home due to ice and I have some bananas that are way over ripe.

I made these tonight and they are SO good! I can’t wait for my girls to try them in the morning. I added more chocolate chips as well.

Spectacular! This is the third recipe of yours I’ve made….maple oat bread (loved it), pizza bread (loved it), and banana muffins (loving them right now).

can these be frozen? if so, what is the best way to do so? thanks for posting all of your great recipes, they are so helpful! love searching your site!
