BLT Pasta Salad

After a long, sweaty day spent in sweltering 95 degree heat, I had zero motivation to make dinner. But there were 5 hungry people depending on me to feed them. And I was pretty hungry myself. So I made the only possible decision when a quick and cool dinner was called for.

You guessed it…pasta salad.

This BLT Pasta Salad is a variation of my Chicken Ranch pasta salad. I have never made a pasta salad with lettuce in it before, but it just sounded so good. And it turned out really delicious, so I’ll definitely be doing it again. There is one common sense tip I want to share though – if you’re making your pasta salad Stolen Moments style, wait to add the lettuce until just before serving, unless you like limp lettuce.

Ingredients

  • 1 lb rotini (or other pasta shape), cooked and rinsed in cold water
  • 1 bottle Ranch dressing
  • 1/2 tsp black pepper
  • 1 tomatoes, diced
  • 1 lb bacon, diced and cooked crisp
  • 1/2 head lettuce, diced

Instructions

  • In a large bowl, toss together pasta, Ranch dressing and black pepper. Stir in tomatoes and bacon. Refrigerate until serving then stir in the lettuce until coated. Or, stir in the lettuce and serve immediately.

Notes

So fast, simple and good! This is definitely a great meal for the last few dog days of summer. It would also make a great side dish to take to an end of summer party.
