Share Our Strength Twitter Fundraiser – Join Me!

Remember a few months when I put together the Virtual Great American Bake Sale ebooks? The ebooks were filled with tons of recipes from many wonderful bloggers. And 100% of the proceeds from the sales of the ebooks went directly to Share Our Strength’s Great American Bake Sale program.

I am so passionate about raising money for Share Our Strength’s efforts. If you’ve been a reader of my personal blog for a while, you probably know that our family went through over a year of living with an income well below the poverty line. We struggled, worked hard and came out on top eventually. But our efforts would have been much more difficult were it not for programs like Share Our Strength who diligently work to make sure that no kid goes hungry! So even saying that I’m passionate about raising money for them feels like an understatement.

Tomorrow night (Thursday 7/30) from 9 – 11 EST, I will be moderating a twitter panel as a fund raising effort for Share Our Strength. We will be discussing all things foodie, particularly as it relates to the blogging world and foodie blogging. The panel includes some super star foodbloggers:

Chocolate Peanut Butter Oat Truffles

So, I love chocolate. And I love homemade baked goods. But I don’t love heating up my kitchen when it is sweltering hot outside. What’s a poor chocolate-craving girl to do in that situation?

Why, make a no-bake treat, of course!

This recipe is reminiscent of the classic no-bake cookie, but it’s a little easier, it firms up better, and it makes one heck of a good candy! (And if you stretch your mind a bit, they could almost be considered somewhat healthy too, at least for a candy.)

Chocolate Peanut Butter Oat Truffles

  • 2 T. butter or margarine
  • 1 c. chocolate chips
  • 3/4 c. peanut butter
  • 2 c. old-fashioned, rolled oats
  • 1/2 c. powdered sugar

1. In a medium saucepan, melt butter or margarine, chocolate chips and peanut butter over low heat until smooth. Gradually stir in oats until fully combined.

2. Using a cookie scoop or tablespoon, scoop out balls of mixture and place on aluminum foil or waxed paper. Let firm slightly and cool until safe to handle, about 10 minutes. Roll balls in powdered sugar until completely covered. Return to foil or waxed paper and refrigerate until firm. Store covered in the refrigerator.

Chicken, Brie & Tomato Spaghetti

Brie does not make a regular appearance on our grocery list. In fact, it’s usually only a yearly item at Christmastime when I like to make baked brie as an appetizer. But I do love brie. So when we were leaving Chicago this weekend and my mom asked me to take some leftover brie she had in her refrigerator, I was not about to turn her down.

The only problem was, now that I had accepted this brie, I had to think of what to do with it besides just eat it on some crackers, although that would have been perfectly acceptable in my book. I decided to use a delicious side dish my mom made last week as my inspiration. It worked wonderfully! (If you’re not fortunate enough to have some leftover brie on hand, this would be equally delicious with some cubed mozzarella cheese.)

Chicken, Brie & Tomato Spaghetti

  • 2 T. olive oil
  • 1/2  lb. boneless, skinless chicken breasts, cubed
  • 4 cloves garlic, minced
  • Salt and pepper, to taste
  • 1 lb. spaghetti, fully cooked and drained
  • 1/4 c. olive oil
  • 1 T. red wine vinegar
  • 1 1/2 t. Italian seasoning
  • 1/2 t. salt
  • 1/4 t. black pepper
  • 2 c. brie or mozzarella, cubed
  • 1/2 lb. grape or cherry tomatoes, halved

1. Heat 2 T. olive oil in a large skillet. Add cubed chicken and cook for 5 minutes. Add garlic and season to taste with salt and pepper. Continue cooking until chicken is fully cooked. Stir in fully cooked spaghetti. Remove from heat.

2. In a small bowl, whisk together olive oil, vinegar, Italian seasoning, salt and pepper. Pour into skillet and stir to combine.

3. Stir in cheese and tomatoes. Serve immediately or at room temperature.
